1 lb beef - sliced
4 tbs fish sauce
3 tbs sugar
2 cups coconut milk
6 fresh kaffir lime leaves
1/4 sweet basil leaves
1 cup Thai eggplant or tinned bamboo shoots
2 stalks lemon grass/citronella, bottom part only - sliced
1 tbs sliced galangal or fresh ginger
1 tsp cumin
1/2 cup fresh cilantro or coriander root
8 garlic cloves
10 green Thai chilli pepppers
10 jalapeno peppers
1 tsp chopped shallot
1/4 tsp minced kaffir lime skin
1/4 cup chopped garlic
1/2 cup coconut cream
Blend in electric blender till smooth: for green curry paste To prepare:
Pour coconut milk and green curry paste into a large saucepan and heat to boiling
Add beef, fish sauce, and sugar
Cool at a slow boil for 5 minutes
Add kaffir lime leaves and basil leaves
Remove the contents to a serving bowl and garnish with the red pepper

2 cups/ 500ml coconut milk
1 cup/ 250ml chicken stock
5cm piece of fresh galangal (peeled & sliced)
3 chicken breast fillets (cut into bite sized pieces)
1-2 tsp finely chopped chillies
1 tbsp fish sauce
1 tsp soft brown sugar
1/2 cup fresh coriander leaves
extra coriander leaves for garnish
Combine coconut milk, stock and galangal in a pan.
Bring to boil and simmer over low heat for 10 minutes, stirring occasionally.
Add chicken pieces and chilli to pan, simmer for another 8 minutes.
Stir in fish sauce and brown sugar.
Add coriander leaves

500g/ 1lb egg noodles
1 tbsp oil
3 Asian shallots (chopped)
6 cloves garlic (chopped)
2 tsp red chillies (chopped - optional)
1-2 tbsp red curry paste
350g/ 11 1/4oz lean chicken or pork fillet (finely sliced)
1 carrot (julienne strips)
2 tbsp fish sauce
2 tsp soft brown sugar
3 spring onions (finely sliced)
1/4 cup fresh coriander leaves
Cook noodles in wok/pan of rapidly boiling water for about 2 to 3 minuts or until they are just tender.
Drain and keep warm.
Heat oil in wok/ large frying pan till it is very hot.
Add shallots, garlic, chilli and curry paste and stir fry for 2 minutes or till fragrant.
Add chicken or pork to wok in 2 batches and cook for 3 minutes, or until meat just changes colour.
Stir in carrot, fish sauce, brown sugar and sprin onion.
Divide noodles between bowls and spoon over mixture.
