Dredge chicken breasts through sour cream and then through crushed Ritz crackers.
Lay breasts on foil-lined shallow pan.
Drizzle 1 stick melted butter over chicken.
Bake uncovered at 350 degrees for 30-45 minutes.

6 Chicken Breast Halves, 3 Slices Boiled Ham, Cut In
Skinned & Boned Half
3 Tbls Mayonnaise - Flour
- Salt 1 Cup Dorure
- White Pepper, Ground 1/2 Cup Bread Crumbs
1/4 tsp Seafood Seasoning 1 Tbls Parsley, Chopped
12 oz Crabmeat 2 Tbls Cooking Oil
6 Slices Gruyere
Preheat the oven to 400 degrees.
Pound the chicken breasts between 2 sheets of waxed paper until very thin.
Mix the mayonnaise, seasonings and crabmeat.
Place the chicken breasts, skin side down, on a platter.
Place a halved slice of ham on each breast.
Mound the crabmeat on one end of each chicken breast.
Roll each breast up around the filling.
Prick each breast to seal.
Roll the breasts in flour.
Dip each in the dorurue.
Mix the parsley with the bread crumbs.
Roll the breasts in the bread crumbs.
Heat the oil in a skillet.
Brown the breasts all over.
Arrange the breasts on a lightly greased cookie sheet.
Bake for 10 to 15 minutes.
Serve hot.

Baked Chicken Breast Recipe
With boneless skinless breasts, I really like to coat them in Wheat Germ, (though you could use anything from crunched up crackers to sesame seeds), like a breading. Place them in a glass baking pan or foil lined pan and then sprinkle with some herbs and top with a little butter. Bake at
350°F until done.

6 chicken breasts, skinless & boneless
12 fat free saltine crackers
6 slices plain melba toast
1/2 c flour
2 Egg Beaters
1/2 c. liquid Butter Buds
Salt & pepper to taste
Use a rolling pin and crush the crackers and melba toast on a piece of waxed paper. Place the flour on a small plate. Pour the Egg Beaters on another small plate. Pour the liquid Butter buds into a large non-stick frying pan. Turn stove on low to medium. Coat the chicken breasts with flour. Next dip them in Egg Beaters. Next roll them in the cracker crumbs to coat well. Place them in the frying pan and cook until golden. Cook on both sides. Remove from frying pan and place on a cookie sheet that has been sprayed with a non-fat cooking spray. Turn oven to 350 degrees and bake about 15 to 20 minutes or until crisp.
For a variation, you might add 1 tablespoon Parmesan cheese to the cracker mixture.
