2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 ripe bananas, quartered
2 eggs
2/3 cup brown sugar, firmly packed
6 tablespoons butter, melted
1 teaspoon vanilla
1 cup fresh blueberries
Topping:
1/4 cup granulated sugar
1 teaspoon lemon rind, grated
Preheat oven to 400 Line muffin cups with papers or lightly grease them. Combine flour, baking powder, salt, and cinnamon on sheet of waxed paper. Beat bananas in large bowl with electric mixer until mashed; add eggs, brown sugar, butter, and vanilla; beat until blended; stir in dry ingredients with a wooden spoon until almost blended; stir in blueberries just until combined. Spoon batter into prepared muffin cups, dividing batter equally.
Combine sugar and lemon rind; sprinkle evenly over muffins. Bake for 20-22 minutes or until golden. Remove from pan to wire rack.
2 cups graham cracker crumbs
1 3/4 cup all-purpose flour
1/3 cup firmly packed light brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 ripe medium bananas, mashed
1/2 cup apple sauce
1/4 cup skim milk
1 egg
1 teaspoon vanilla extract
1/2 cup chopped pecans (optional)
Directions:
Preheat oven to 400 F. Line 16 (2 1/2 inch) muffin cups with paper liners or spray with nonstick cooking spray. In large bowl, combine graham cracker crumbs, flour, brown sugar, baking powder and salt. In medium bowl, whisk together bananas, apple sauce, milk, egg and vanilla. Stir apple sauce mixture into flour mixture just until moistened. Fold in pecans, if desired. Spoon evenly into prepared muffin cups. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan; cool on wire rack 10 minutes. Serve warm or cool completely.

12 slices ripe banana
12 maraschino cherries, halved
12 walnut halves
2/3 cup flaked coconut
In a bowl, combine biscuit mix and 1/4 cup sugar. In another bowl, beat the egg yolks, milk and oil; stir into dry ingredients just until moistened. Spoon 1-1/2 tablespoons of batter into 12 paper- lined muffin cups. Place a banana slice, cherry half and walnut half in each cup. Top with remaining batter.
In a small mixing bowl, beat the egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold in the coconut. Spoon over batter. Top with remaining cherry halves. Bake at 400 degrees for 14-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Store in the refrigerator.

1 egg, beaten
6 ounces semi-sweet chocolate
chips
1/2 cup chopped walnuts (optional)
Combine baking powder, flour, sugar and cocoa. Blend in milk, oil, egg and banana until moistened. Mix in chocolate chips. Spoon batter into 12-cup muffin tin, greased or with with paper liners. Bake at 325 F for 16-18 mins. Serve warm.
