24 ounces mesquite wood chips
96 ounces beef brisket
Barbecue Rub
1/4 cup new mexico chile powder
2 teaspoons ground cayenne pepper
2 teaspoons garlic powder
1 teaspoons ground black pepper
1/4 teaspoon ground cumin
1/2 cup cider vinegar
Basting Sauce
1 large onion, chopped
4 cloves garlic, minced
1/4 cup vegetable oil
1/4 cup Worcestershire sauce
3 tablespoons cider vinegar
12 ounces beer
1/2 cup catsup
2 tablespoons new mexico chile powder
4 dried chile pequins, crushed
8-10 servings

1 (4 to 5 lb.) beef brisket
Salt and pepper to taste
BARBECUE SAUCE:
3 (8 oz.) cans tomato sauce
1/2 c. water
1/2 c. chopped onion
1 garlic clove, minced
1/4 c. red wine vinegar
1/3 c. brown sugar, firmly packed
2 tbsp. honey
2 tsp. dry mustard
1 tsp. chili powder
1 tsp. salt
Preheat oven to 325 degrees. Sprinkle brisket with salt and pepper. Roast in covered roasting pan 3 to 4 hours until tender when pierced with a fork. Cool and refrigerate.
Prepare barbecue sauce; set aside. Cut excess fat from beef. Slice meat into thin slices. Place a layer of meat in the bottom of a large oven-to-table casserole dish. Spread with a layer of sauce. Continue layering meat and sauce until all is used. Cover with aluminum foil. May be refrigerated up to 2 days or frozen.
Before serving, bring meat and sauce mixture to room temperature. Preheat oven to 350 degrees. Bake 1 hour or until heated through. Makes 10 to 12 servings.
BARBECUE SAUCE: Mix all ingredients in a medium saucepan. Bring to boil. Lower heat and simmer uncovered 30 minutes, stirring occasionally. May be frozen. Makes 4 cups.

Barbecue Brisket
1 (5-pound) brisket
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 onion, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1 cup chili sauce
1 cup water
1/4 cup fresh parsley, chopped
1 (10-ounce) bottle of beer
Fresh parsley
Preheat the oven to 325 degrees.
Wash and dry the brisket, cutting away most of visible fat.
Sprinkle the brisket with salt, pepper and paprika.
Place the brisket, fat side up, in a heavy baking pan. Surround with the onions, celery and garlic.
Pour chili sauce on top of the brisket.
Slowly pour the water into the pan around the brisket. Sprinkle with the parsley.
Bake, uncovered, for 1 hour. Remove from oven and pour the beer over the brisket.
Do this slowly so it doesn't wash off the chili sauce.
Cover the brisket and cook 3 hours longer or until tender.
Cool to room temperature. Place in refrigerator.
Remove any accumulated fat from the top.
Slice and reheat in the sauce.
Garnish with a sprinkling of fresh minced parsley.

1 c chili sauce
1 c water
1/4 cup chopped parsley
Remove most of fat from brisket. Wahs and dry. sprinkle with salt and pepper.
Place meat fat side up in heavy casserole. Cover with onion, celery, chili sauce, water and parsley. Bake uncovered in 325 oven for 1 hour. Pour beer over and bake, covered, for 3 more hours or until tender.
Cool to room temperature, refrigerate, skim off fat, slice and reheat in sauce.
