2 tablespoons vegetable oil
1/2 pound bacon, chopped
1/2 pound sliced deli turkey meat, torn into pieces
1 onion, sliced
1 (14.25 ounce) can tomato puree
1 tablespoon brown sugar
1 teaspoon prepared mustard
1 pinch salt
1 pinch ground black pepper
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can cannellini beans, drained and rinsed
Heat the oil in a large pot over medium heat, and cook the bacon, turkey, and onion until bacon is evenly brown and onion is tender.
Mix the tomato puree, brown sugar, and mustard into the pot. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer 30 minutes, stirring occasionally.
Mix the kidney beans and cannellini beans into the soup. Add water to keep the ingredients covered, if needed. Continue to cook, stirring occasionally, until beans are heated through.
-----------------------
1 pound of beans
1 large can diced tomatoes
1 round Polish sausage
1 large onion
1 cup raw cabbage
Worcestershire sauce to taste
Salt and pepper or I use Cajun seasoning to taste
Soak beans overnight. The next morning pour the water off and cover again with cold water. (About 6 quarts) Add all the other ingredients, bring to a boil, reduce heat and let simmer all day long ever so slowly. Serve it up with a nice tossed salad. Leftovers are even better the next day.
-------------------------
2 tbsp. butter
1/3 c. diced celery
1/3 c. diced carrot
1/3 c. diced onion
1 tbsp. minced garlic
1 can (16 oz.) white navy beans
1/2 tsp. dried thyme
1/8 tsp. pepper
2 c. water
1 packet chicken gravy mix
8 oz. smoked ham, diced (1 1/2 c.)
Melt butter in medium size saucepan over medium low heat. Add celery, carrot, onion and garlic; stir to mix well. Cover and cook 5 minutes or until vegetables are almost tender. Add remaining ingredients. Bring to boil over medium high heat. Reduce heat, cover and simmer 15 minutes for flavors to blend.
Pour 1/2 cup soup into blender, puree until smooth and return to pot; or mash some of the vegetables against the side of the pot with a fork or wooden spoon. Simmer soup uncovered 5 minutes longer. Makes 4 servings.
