Best Banana Bread

Mix together:
1/2 cup sugar
2 cups mashed very ripe bananas (about 6 medium to large)
1 tsp vanilla

Blend together:
2 cups flour (part whole wheat pastry) OR 1 1/2 cups flour + 1/2 bran
cereal or uncooked oats
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
shake of cinnamon

Combine ingredients and bake in spray coated loaf pan for 1 hour at 350 degrees. Two small loaf pans bake for about 40 min.

Place all ingredients in pan (wet ingredients first), insert pan
into unit and select CAKE cycle. Check to make sure all
ingredients are moistened and no flour remains in the corners.

The Best Banana Bread

1/2 cup margarine, softened
1 cup white sugar
2 eggs
1 1/2 cups mashed banana
2 cups all-purpose flour
1 teaspoon baking soda

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.
Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

Change to: loaf US Metric
3 very ripe bananas
1/2 cup honey
3 tablespoons canola oil, plus a little more for oiling the loaf pan
1 teaspoon pure vanilla extract
1 1/2 cups whole-wheat flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup chopped walnuts or pecans

Heat the oven to 350 degrees. Lightly oil a loaf pan.
Mash the bananas and mix with the honey, canola oil and vanilla extract.
Stir together the whole wheat pastry flour, baking soda and salt. Add the nuts.
Blend the two mixtures and spoon into a lightly oiled loaf pan. Bake for 40 minutes, or until center is set.
