Boneless, skinless chicken breasts are one of the most convenient meats available in your supermarket. There are so many recipes for chicken breasts. They also taste delicious, and are tender and juicy if cooked properly. And as an added bonus, kids love chicken!

Canola cooking oil spray
2 tsp. canola oil
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
Pinch cayenne pepper
1 cup rolled oats (not quick-cooking)
1 large egg white
1 large or 2 small, whole skinless, boneless chicken breast, about 3/4 lb.
1/2 cup honey mustard
2 Tbsp. low-fat yogurt
2 Tbsp. reduced-fat sour cream
Place the oven rack in the center of the oven. Preheat the oven to 450 degrees. Coat a baking sheet with cooking spray and set it aside.
In a medium bowl, whisk together the oil, salt, pepper and cayenne. Place the rolled oats in a blender and process until they are coarsely ground. Add the oats to the oil mixture and mix it in with your fingers until the oil is well distributed. Transfer the mixture to a flat plate. In another bowl, whisk the egg white until it is foamy.
Cut the chicken lengthwise into 8 half-inch strips. Dip the chicken into the egg white, then roll it in the oat mixture, pressing with your fingers to help it adhere. Arrange the coated chicken slices on the prepared baking sheet. Coat them with cooking spray.
Bake until the chicken is tender when pierced with a fork and the coating is golden brown, about 15 minutes. Cool for 5 minutes on the baking sheet.
Meanwhile, in a small bowl, mix together the mustard, yogurt and sour cream. Place the bowl in the center of a serving plate. Arrange chicken fingers around the dip and serve. A good boneless skinless chicken recipe.

1 Tbsp. butter
1 Tbsp. olive oil
6 boneless, skinless chicken breasts
1 Tbsp. finely chopped fresh rosemary
1/4 cup chicken broth or apple juice
6 thin slices prosciutto or boiled ham
1 cup shredded mozzarella cheese
2 Tbsp. grated Parmesan cheese
In large heavy skillet melt butter with olive oil. Add chicken and rosemary. Cook over medium heat until light brown, about 3-4 minutes. Turn chicken, add chicken broth or apple juice, cover, and continue cooking until chicken is tender, about 10-12 minutes.
Place chicken on a broiler pan and top each with 1 piece of ham. Sprinkle evenly with cheese and broil 3-4" from heat until cheese is melted.
Serves 6

4 boneless, skinless chicken breast halves
1 tablespoon olive oil
Salt and pepper
Rinse chicken breasts and pat dry. Brush with oil and season with salt and pepper to taste. Place chicken breasts in centre of cooking grate.
Grill 10 to 12 minutes or until tender and no longer pink inside, turning once halfway through cooking time.
Makes 4 servings.
Tasty variations:
Grilled chicken breasts can be sliced and served on top of a tossed green salad with a light vinaigrette dressing.
Grilled chicken breasts make delicious sandwiches. Place grilled breast on a bun and top with lettuce and sliced tomato or a grilled red pepper half. Serve with your favourite dressing.
For a quick salad, cube grilled chicken breasts, combine with chopped walnuts, celery, apple cubes, and mayonnaise or salad dressing; season to taste.
Grill up a couple extra to toss into tomorrow night’s pasta dish!
