3 1/2 cups flour
1 tsp baking powder
1 tsp salt
1/4 tsp nutmeg
1 cup (2 sticks) unsalted at room temp.
1 cup shortening
2 cups sugar
9 extra-large eggs
2 tablespoons vanilla
3/4 cup milk
Oven 325F
Pan: 2 loaf pans, greased and bottoms lined with parchement
Sift dry ingredients into a bowl and set aside
Cream and shortineing with an electric mixer for 5 minues. Then with
the mixer runing, add sugar, 1/2 cup at a time, beating for 1 or 2 minutes
after each addition. Then add the eggs one at a time beating for 3 minutes
after each addition. Beat in the vanilla. This is a total of 35 minutes of
beating which will produce a very nice texture.
Mix in the flour in four batches (by hand), alternating with the liquid.
Start and end with the dry ingredients.
Bake for about 1 hour. Let cakes cool on a wire rack for 30 minutes before
removing them from the pans. Cakes are done when the tops spring back when
touched and a toothpick inserted into the center comes out clean.

1 (18.25 ounce) package moist yellow cake mix
4 eggs
1/2 cup white sugar
1/2 cup vegetable oil
3/4 cup apricot nectar
1/4 cup apricot brandy
3 tablespoons apricot nectar
3 tablespoons white sugar
2 tablespoons butter
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 or 10 inch Bundt pan.
In a large bowl, mix together the cake mix, eggs, 1/2 cup of sugar, oil, 3/4 cup of apricot nectar and brandy using an electric mixer on low speed. Mix for 3 minutes on high speed. Pour into the prepared pan.
Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the crown of the cake comes out clean. Cool in the pan, then invert onto a serving plate.
To make the icing, combine 3 tablespoons of apricot nectar, 3 tablespoons of sugar and butter in a saucepan. Cook over medium heat, stirring, until butter is melted and sugar has dissolved. Let cool one minute, then pour over the cake.
