1 lb flour
1 level teaspoon salt
1 oz English or Welsh butter [Well, it *is* the Dairy Cookbook]
1 oz caster sugar
2 oz currants
1/2 (half) oz fresh yeast
1/2 pint lukewarm milk
Sift flour and sugar into bowl and rub in butter. Add sugar and currants, toss together lightly
Blend yeast with milk. Add all at once to dry ingredients. Mix to firm dough. Knead for 10 minutes or until dough is smooth and elastic.
Cover and leave to rise for 10 minutes. Knead well again, divide into 6 pieces. Roll into 6" rounds. Cover and leave to rise until almost double in size.
Bake just above centre of fairly hot oven, 400 F or gas mark 6 for 20 minutes.
To serve split open and spread thickly with butter. Can be split open and toasted before buttering. A good cake.

1 cup butter or shortening
3 ounces cream cheese, softened
1 cup sugar
1 egg
1 teaspoon almond extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup finely chopped nuts
24 maraschino cherries, halved
Cream the butter or shortening and cream cheese together. Add the sugar, egg and almond extract.
Sift the dry ingredients together and stir into the creamed mixture. Chill the dough thoroughly.
Form the chilled dough into 1-inch balls. Roll the balls in the chopped nuts and place them on an ungreased cookie sheet.
Press a cherry half into the center of each cookie.
Bake at 350° for 10 to 15 minutes. Makes 48 cookies.

16 frozen tart shells (from your grocer), thawed and baked*
3 cups vanilla pudding
3 cups assorted fruit
2 cups strawberry or raspberry gelatin, slightly thickened but not set
Whipped cream, optional
Hint: Think about adding a sprig of mint or pecan half, to your fruit tart arrangement.
Spoon the pudding into the bottom third of the tart shells.
Decoratively arrange the fruit on top.
Pour gelatin over the fruit and chill.
Top with whipped cream, if desired. Makes 16 tarts.
*Try using mini tart shells, if you like. As long as they're not too small they'll work well for traditionally small tea party fare.
