500 g boneless skinless chicken breasts, diced (or left over roast chicken)
1 onion, chopped
2 garlic cloves (crushed)
2 teaspoons paprika
2 teaspoons thyme
1-2 tablespoon olive oil (for frying)
500 ml milk
250 g cheddar cheese, grated
1 tablespoon flour
1 tablespoon butter
1. Brown the Onions, using the olive oil.
2. Add the diced chicken pieces, season with the Paprika, Thyme and Garlic while frying.
3. Prepare whatever sort of Pasta you like (I use Penne for this one).
4. Using a deep dish approx 15 cm in diameter, place the butter in the dish and Microwave on High for 30-45 seconds.
5. Should be melted when removed.
6. Add Flour and combine.
7. Add the milk (DON'T MIX YET, it goes lumpy if you mix it at this point).
8. Microwave on High for 2 minutes.
9. Add the cheese and mix.
10. Microwave on High for another 2 Minutes.
11. Watch it very closly.
12. Milk has a tendency to boil over.
13. Remove occasionally to mix and check thickness.
14. Alternatively you can prepare your cheese sauce using the stove top method.
15. For this recipe you want the sauce to be a bit runny as it will be added to the Chicken and left to simmer for 5-10 minute.
16. A tasty variation is adding Chopped Green Peppers.
17. Add them while seasoning you don't want them to get soft.
18. I'm sure that Mushrooms could be added to this recipe.
19. Fry them up and add then just before combining the sauce with the Chicken and onions.

1 can (10 3/4 ounces) cream of chicken soup, undiluted
1/4 cup of milk
1 cup of chopped cooked chicken (may substitute canned chicken or frozen, cooked chicken strips)
1/4 cup frozen peas
1 jar (2 ounces) of diced pimento, drained
1 can (4 ounces) whole mushrooms, drained
1/2 teaspoon of salt
1/8 teaspoon of pepper
Chow mein noodles, hot cooked rice or toast
Combine all ingredients except the noodles in a heavy saucepan; cook over low heat for 10 minutes, stirring often. Serve over noodles, rice or toast.
Nutritional data per serving: Calories, 353: protein 30 grams, carbohydrates, 27 grams; fat, 14 grams; cholesterol 79 milligrams; sodium, 1,985 milligrams.

1 package mushroom soup mix
1 package Instant chicken gravy mix
2 1/2 cups Water
1 cup Milk
3 cups Cooked, diced chicken
1 (2 oz.) jar pimento, sliced
4 ounces Mushrooms, sliced and sauteed
Sherry or white wine (optional)
Mix soup mix with water; heat to boiling, stirring constantly. Let simmer, covered, for several minutes. Bring back to boiling. Add gravy mix and milk. Stir to blend. Cook several minutes. Add chicken, pimento, mushrooms, and sherry or wine if desired. Taste before seasoning with salt and pepper.
Serve over rice. Can be made ahead. Freezes well.
