4 boneless chicken breasts, sliced in thin strips
1/2 cup fresh lemon juice
4 tablespoons salad oil,
plus 2 tablespoons of oil for cooking
1 tablespoon wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 green pepper, sliced in thin strips
1 onion, sliced in thin strips
In a bowl add lemon juice, oil, vinegar, salt, pepper, garlic powder, chili powder, and cayenne pepper and stir until combined. Add chicken strips, green peppers and onion and coat evenly with marinade. Marinate for 1 hour.
In a hot large skillet or cast iron fajita pan, add 2 tablespoons of oil and add chicken, peppers and onions. Cook until the juices of the chicken run clear, about 15 minutes. Stir the fajitas often so that they do not stick to the pan and burn.
Serve with warm flour tortillas and your favorite accompaniments. I suggest sour cream, guacamole, shredded cheese, and Pico de Gallo (salsa).
* If you would prefer to grill the chicken, do not cut it into strips. Grill for 15 minutes or until juices run clear.

3 boneless skinless chicken breasts
2 limes, grated and juiced
2 tablespoons sugar
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper
1 teaspoon cinnamon
2 onions
3 bell peppers (1 red, 1 yellow or orange and 1 green)
3 tablespoons vegetable oil
12 flour tortillas
guacamole, to serve
salsa, to serve
sour cream, to serve
Slice the chicken breasts into 3/4-inch wide strips and place them in a large bowl.
Add the lime zest and juice, sugar, oregano, cayenne, and cinnamon.
Mix thoroughly.
Set aside for at least 30 minutes Cut the onions in half and then slice them thinly.
Cut the peppers, remove the cores and seeds, then slice them into 1/2-inch wide strips. Heat the oil in a large frying pan.
Stir fry the marinated chicken for 5-6 minutes, then add the peppers, and onions and cook for 3-4 more minutes, until the chicken strips are cooked through and the vegetables are soft and tender, but still juicy. Meanwhile, heat the tortillas in the microwave to soften them.
Spoon the chicken mixture into a serving bowl and take it to the table with the cooked tortillas, guacamole, salsa and sour cream.
Keep the tortillas warm.

1 cap full Mrs. Dash (regular or chipotle)
1 large onion
1 green pepper
1/4 brown sugar
lettuce, tomato, sour cream, guacamole, cheese, tortillas
Slice chicken into long strips, place in pan with half of the butter and Mrs. Dash. Cook until done and lightly browned. Stir in a small amount of water or chicken broth and the brown sugar. Cook until caramelized.
Chop the pepper and onions into strips and rings, sauté in a separate skillet with the remaining butter. Cook until onions are caramelized and peppers have crispy edges.
