1 1/2 teaspoon Butter
1 1/2 teaspoon Olive oil
1 large Yellow onion -- diced
28 ounces Tomatoes -- diced, canned
1 Whole jalapeno pepper (or Serrano) -- diced
6 ounces Vegetable-juice cocktail (V-8)
2 tablespoons Chicken stock
2 cups Hot water
3/4 teaspoon Ground cumin
3/4 teaspoon Paprika
1 pinch Chili powder
1/2 teaspoon White pepper
1 Clove garlic (or more) -- Minced
1 1/2 tablespoon Tomato paste
1/2 cup Fresh cilantro -- chopped
1 tablespoon Cornstarch
1 tablespoon Water
6 Corn tortillas -- 6-inch Size
Vegetable oil -- for frying
1 cup Avocado -- diced
2 cups Grilled chicken breast -- Diced
1/4 cup Fresh cilantro -- chopped
1 cup Cheddar cheese -- grated
Heat butter and olive oil in heavy saucepan until butter melts. Add onion and cook until translucent. Add tomatoes and continue to cook until soft. Add jalapeno and mixed vegetable juice. Bring to boil and add stock and hot water.
Bring to simmer. Add cumin, paprika, chili powder, white pepper and garlic, and cook, tirring occasionally. Add tomato paste and 1/4 cup cilantro and cook, stirring ccasionally. Mix cornstarch with 1 tablespoon water, then stir into tomato mixture and simmer until liquid is shiny, about 10 minutes.
Meanwhile, cut tortillas into 1 1/2-inch strips or cubes and deep-fry in hot oil. Remove and drain.
To serve, distribute 1/2 cup avocado, 1 cup chicken breast, 1/8 cup chopped cilantro and half tortilla strips among 6 bowls. Pour hot soup over garnish and top with remaining avocado, chicken breast, chopped cilantro and tortilla strips. Pass grated cheese on the side.

2 chicken breasts halves, boned, skinned and cubed
1 onion, finely chopped
1 clove garlic, crushed
3 medium tomatoes, peeled, seeded and chopped
4 cups chicken broth
1/4 teaspoon salt
1/8 teaspoon pepper
1 mild green chile, seeded and chopped
2 tablespoons vegetable oil
4 corn tortillas, halved and cut into 1/4 inch strips
shredded Monterey Jack cheese, a little for each serving
2 tablespoons coarsely chopped fresh cilantro or
Italian parsley
Combine chicken breasts, onion, garlic, tomatoes, broth, salt, pepper and green chile in slow cooker. Cover and cook on low 7-8 hours. Heat oil in large skillet and add tortilla strips. Cook, stirring, over medium heat until crisp; drain on paper towels.
If desired, put a tablespoon or 2 of shredded Monterey Jack cheese in each serving bowl. Ladle tortilla soup into bowls and top with tortilla strips; sprinkle with chopped cilantro or parsley.

2 large ripe avocados
4 teaspoons Tabasco Brand Green Pepper Sauce divided
1/2 teaspoon salt or to taste
3 cans (14 1/2 ounce) chicken broth
3 boneless skinless chicken breast halves
2 tablespoons uncooked rice
1 large tomato seeded and chopped
1/2 cup chopped onion
1/4 cup finely chopped cilantro
tortilla chips
1/2 cup shredded Monterey Jack Cheese
Scoop out avocado into medium bowl and mash with fork. Add 1 1/2 teaspoons Tabasco Green Pepper Saute and salt; blend gently but thoroughly. Set aside. Heat chicken broth to boiling in 4 quart saucepan. Add chicken brest halves; reduce heat and cook until chicken is opaque.
Remove chicken and cut into bite size pieces. Add rice and cook about 15 minutes or until tender. Return chicken to saucepan. Just before serving, stir in tomato, onion, cilantro and remaining 2 1/2 teaspoons Tabaco Green Pepper Sauce.
To serve, break small handful of tortilla chips into bottom of each bowl. Ladle soup over tortilla chips. Top with cheese and 1 rounded tablespoon avocado mixture. Serve immediately with additional Tabasco Green Pepper Sauce, if desired.
