4 halves skinless boneless chicken breast -- cut in pcs
1 1/2 tablespoons corn starch
1 tablespoon soy sauce
3 tablespoons peanut oil
1 medium green pepper -- thinly sliced
4 medium mushroom -- sliced
1/2 lb snow peas ` -- cut in half
1/2 cup cashews or peanuts
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper
SAUCE:
6 tablespoons soy sauce
3 tablespoons white wine (or apple juice)
1 1/2 tablespoons cider vinegar
3 tablespoons brown sugar
1 tablespoon cornstarch
1 tablespoon oi
In a large bowl combine chicken with cornstarch and soy sauce, stir well and let sit at least 5 minutes. Clean,cut and prepare all ingredients ahead of time, including sauce mixture (recipe follows). In a large frying pan or wok over medium-high heat, heat oil, add chicken and quickly stir-fry until done, 2-3 minutes. Remove chicken from pan and set aside on a plate. Add sliced green pepper and mushrooms to pan and stir-fry 2 minutes. Add pea pods and nuts, stir fry 2 more minutes and add ginger and cayenne. Return chicken to pan with vegetables, add sauce and stir. Cover skillet and cook 5 minutes over medium heat. Serve over boiled white rice. Makes 4-6 servings.
SAUCE: In a small bowl combine all ingredients and mix thoroughly.

1 lb. boned, skinned chicken breasts - cubed
3 Tbls. soy sauce - divided
1 1/2 Tbls. cornstarch mixed with 1 1/2 Tbls. cold water
1 Tbls. dry sherry
1 Tbls. granulated sugar
1 tsp. cornstarch
1/2 tsp. salt
1 tsp. sesame oil
3 1/2 Tbls. vegetable oil - divided
1/2 cup unsalted roasted peanuts
4-8 dried red chili peppers - chopped
1 slice peeled, fresh ginger - chopped
1 clove garlic - sliced
Do so to make thid chinese chicken recipe.
Combine chicken, 1 Tbls. soy sauce, and cornstarch/water mixture; allow to marinate for 30 minutes.
Combine 2 Tbls. soy sauce, sherry, sugar, cornstarch, salt, and sesame oil; set aside.
In a hot wok, stir-fry the peanuts in 1 1/2 Tbls. vegetable oil until golden brown, remove peanuts from wok, and set aside.
Fill wok with vegetable oil for frying and heat to 350 degrees. Carefully slide the chicken into the wok, piece by piece, and fry for 1 minute.
Remove chicken from oil and drain on a brown paper bag. Remove oil from wok.
In hot wok, stir-fry the red peppers in 2 Tbls. vegetable oil until they turn dark. Add ginger, garlic, and chicken to the wok and fry, stirring constantly. Stir the prepared sauce and add to the wok. Stir and cook wok contents until the sauce is thickened. Stir in peanuts and serve.

2 skinless, boneless chicken breast
Rice wine or milk vinegar - 1/4 cup
Chicken broth - 1/4 cup
Minced ginger - 2 tbsps
Minced garlic - 1 tbsp
Red pepper - 1 (cut in cubes)
Carrots - 2 (cut in 1/2cm slices)
Bamboo shoots - 1/2 can (sliced)
Green onions - 3 (cut in thin strips)
Sesame oil - 2 teaspoons
Light soy sauce - 2 tbsps
Salt and pepper - add to taste
Parallel cut each chicken breast into 2 thinner halves. Sprinkle on a little salt, and then steam for 5 to 7 minutes.
Let it cool for a bit, and cut into 1/2 cm thick slices.
In a bowl, mix vinegar, chicken broth, ginger, garlic, sesame oil, and soy sauce to make the dressing.
Heat the half of the dressing in a pan just to warm, and add in red peppers, carrots, bamboo shoots, and green onions. Cook for 1 to 2 minutes.
In a salad bowl, mix the chicken with the veggies, and the remaining half of the salad dressing.
