3 eggs
2 sticks butter
2 cups sugar
1/2 cup evaporated milk
1 teaspoon baking soda
1 tablespoon almond extract
OR 2 tsp. nutmeg and 1 1/2 Tb vanilla
2 teaspoons baking powder
7 1/2 cups flour
ICING:
2 cups powdered sugar
3 tablespoons evaporated milk
1 teaspoon vanilla extract
1 to 3 drops food coloring
Beat eggs. Add butter, sugar, milk and mix. Mix soda in a little water (enough to stir) and add to mixture. Sift flour and baking powder together and blend gradually into cookie mixture. Grease and flour cookie sheets. Roll dough into 1/4 inch thickness and cut with Christmas cookie cutters and place on cookie sheet. Bake at 375F for 10 to 12 minutes.
For icing, sift powdered sugar and stir in milk until mixture reaches icing consistency. Add vanilla extract for flavor and stir. Divide icing into containers and add food coloring to each container to obtain desired colors. Ice cookies after they have cooled. Allow icing to dry before moving cookies.

3/4 c. butter, softened
1/3 c. eggnog
1 egg
1 t. vanilla extract
2 1/2 c. flour
1/2 t. nutmeg
1/4 t. salt
1 t. baking powder
In a large bowl, combine sugar and butter. Beat until mixture is creamy, about 2 minutes.
Add 1/3 c. eggnog, egg and vanilla; continue beating until well combined. Reduce the speed to low; add flour, baking powder, nutmeg and salt. Beat until dough is well mixed.
Divide the dough in half and wrap each in plastic wrap. Refrigerate until it is firm, at least one hour.
Preheat oven to 375°. Roll out dough, one half at a time on a lightly floured work surface to a ¼-inch thickness. Cut out the cookies with a Santa shape or your favorite holiday cutter. Place the cookies 2 inches apart on ungreased baking sheets.
Bake the Santa cookies for 8 to 10 minutes or until the edges are lightly browned. Remove from the oven and cool completely.
Frost with your favorite icing or decorate with sprinkles and candies.
