Easy Pancake Recipe

1 1/4 cup whole wheat flour
1 T baking powder
1 t salt

Combine:

1 cup milk or soymilk
2 T light tasting olive oil

Add wet ingredients to dry ingredients. Bake on hot griddle or frying pan. Makes 8 four inch pancakes. Can be easily doubled or tripled. Try adding frozen or fresh blueberries to this recipe for blueberry pancakes.

Easy Pancake Recipe

• 1 egg
• 1 cup of self-rising flour*
• 3/4 cup of milk
• 2 tablespoons of oil
• 1 tablespoon of sugar

Mix all ingredients thoroughly in a bowl using a wisk or fork. Kids can measure and stir. Spray pan with nonstick cooking spray (such as Pam - recommended) or grease bottom only lightly with butter. Heat electric skillet or griddle to medium high. Test readiness by sprinkling water on to see it bubble. Using a ladle, pour in pancakes one by one. Watch carefully. As the top begins to bubble, (generally in less than 5 minutes dependant on heat), flip the pancake. Cook for another minute or two and then serve immediately. Top with butter & your favorite syrup!
