600 gram(s) boneless sole fish or king fish pieces cleaned
1 tablespoon(s) vinegar
1 cup(s) gram flour
2 tablespoon(s) yoghurt
1 egg lightly beaten
1 tablespoon(s) red chilli powder
2 tablespoon(s) garlic paste
2 tablespoon(s) ginger paste
½ teaspoon(s) thymol seeds (ajwain)
1 teaspoon(s) garam masala (hot spice mix)
1 tablespoon(s) lemon juice
salt to taste
oil to deep fry
lemon wedges to garnish
1. Sprinkle a little gram flour, salt and some vinegar on the fish pieces and rub well. Keep aside for 5 minutes and then wash well. Rub in the rest of the vinegar and keep aside for 15 minutes. Remove from the vinegar and pat dry well. It is important that the vinegar is removed from the fish pieces by gently wiping them repeatedly with an absorbent kitchen towel.
2. In a bowl, mix the rest of the ingredients and rub well on the fish pieces. Marinate for about half an hour.
3. Heat the oil till it is very hot. Slide in the fish pieces and deep-fry in batches till they are crisp and golden brown in color.
Garnish with lemon wedges.
* Fish slices can be used in place of boneless fish

2 eggs, beaten
1 1/2 cups crushed saltine crackers (about 45 crackers)
2 lbs fish fillets (use a firm, white fish, about 1/2 inch thick such as -- whitefish, tilapia, sea bass)
vegetable oil (for frying)
1. Place beaten eggs and saltine cracker crumbs in separate shallow bowls or pie tins.
2. Dip fillets into eggs, then coat with crumbs; let stand for 5 minutes.
3. In a heavy, deep skillet, or electric frying pan, heat oil (about 3/4 to 1 inch of oil) to 375°. Fry fillets, a few at a time, for 2 minutes on each side or until fish is golden brown and flakes easily (I found that when the fish is golden brown it's DONE).
4. Drain on a rack over paper towels. If you're making lots of fish place the rack in a 225° oven while you're cooking the remaining batches.

4 big mackerels cut into 2-3 pieces each and insides cleaned thoroughly
1 teaspoon(s) turmeric powder
1 tablespoon(s) lemon juice
4 teaspoon(s) red chilli powder
1 tablespoon(s) garlic paste
1 tablespoon(s) ginger paste
1 teaspoon(s) coriander powder
1 tablespoon(s) tamarind pulp or kokum peels pulp
4 tablespoon(s) slightly coarse rice powder
salt to taste
oil to deep fry
onion rings and lemon wedges to garnish (optional)
1. Wash the mackerels thoroughly. Apply some salt, turmeric powder and lemon juice. Keep aside for 10 minutes.
2. Marinate the mackerels with the rest of the ingredients except rice powder preferably in a refrigerator for about an hour.
3. Heat the oil till it is very hot. Roll the mackerels in rice powder one by one and and deep-fry in batches on medium heat till they are crisp.
Garnish with onion rings and lemon wedges.
* Mackerels can be fried whole as well. Clean the insides, wash well and make deep incisions or gashes on both sides and proceed as above.
* To make this recipe a low fat one, the marinated mackerels can also be shallow fried or grilled with a minimum amount of oil instead of deep frying.
* Kokum is a fruit whose peels are sun dried and stored to use as a souring agent. It is very abundant in the western coastal region of India and is used in most of the recipes there. However, tamarind pulp could be used instead.
* Traditionally, fried fish is made very spicy and had with steamed rice and gravy. Fried mackerels can also be had as a snack with a dip or a chutney.

6 red mullet, gutted and scaled
2 tbsp Dijon mustard
200g jar grainy mustard (such as Meaux)
olive oil
Heat the oven to 200°C/gas 6. Make 3 incisions across the fish on each side. Mix the Dijon and grainy mustard and spread thickly all over the fish, pushing some into each of the cuts. Lightly oil a large baking tray, place the fish on it and bake in the top of the oven for 20 minutes. Serve at once.
