    Gluten-Free Green Tomato Bread

    8-10 med. green tomatoes
    2/3 c. boiling water
    2/3 c. veg. shortening
    2 & 2/3 c. sugar
    4 eggs
    3 & 1/3 c. flour (equal amts. of garbanzo, oat, potato, tapioca, rice and brn. rice flours)
    2 tsp. bak. soda
    1 & ½ tsp. salt
    1/2 tsp. bak. powd.
    1 tsp. cinnamon
    1 tsp.cloves
    2/3 c. pecans or walnuts (coarsely chopped)
    Yields 2 loaves.
    350 deg.
    1 hr.

    Slice green tomatoes, cut in quarters, run through blender til creamy. Need 2 cups pulp for recipe. Soak raisins in boiling water. Set aside to cool.

    Cream shortening, sugar, and eggs in large mixing bowl. Add pulp, raisins and their water. Beat well. In separate bowl, combine flour, soda, salt, powder, cinn., clo., and nuts. Add one cup at a time to tomato mixture. Stir well each time. Divide into 2- 9x5 in. greased loaf pans.

    Bake for at least 1 hr. Possibly 10 min more. (I turned oven off after 1 hr. and left in 10 min. more.)

    Gluten-Free Almond Flour Bread

    1 cup of brown rice flour
    1 cup almond flour
    ¾ cup white rice flour
    ¼ cup tapioca flour
    2 ½ teaspoons guar gum or xanthan gum
    1 teaspoon salt
    2 teaspoons instant yeast

    2 eggs
    2 tablespoons honey
    2 tablespoons olive oil
    1 teaspoon vinegar or lemon juice
    1 - 1 ¼ cups warm water

    Mix dry ingredients in food processor. Add the wet ingredients. Process until it is thick like a cake mix. Add more water as needed. Pour into pan and rise as high as ¾ of the pan. Bake at 350F for 30 minutes.

    For cinnamon raisin or date loaf, add ½ cup of soaked raisins - (5 min in boiling water) and 2 teaspoons of cinnamon. For pizza, spread the dough onto a cookie sheet using lots of olive oil to press it down. Bake at 400F for 10 minutes. Add toppings and cook another 10 minutes.

    Alison's Gluten-Free Yeast Bread

    3 cups GF flour mix(see below)
    1/4 cup sugar
    3 1/2 teaspoons xanthan gum
    2/3 cup dry powder milk
    1 1/2 teaspoon salt
    2 teaspoons sugar
    1/2 cup lukewarm water
    1 1/2 tablespoons yeast granules
    1/4 cup shortening
    1 1/4 cups water
    1 teaspoon vinegar
    3 eggs
    Combine flour, sugar, xanthan gum, milk powder, and salt in bowl of heavy duty mixer. Use strongest beaters. Dissolve the 2 teaspoons of sugar in the 1/2 cup of lukewarm water and mix in the yeast Set aside while you combine the shortening and 1 1/4 cups water in saucepan and heat until shortening melts. Turn mixer on low. Blend dry ingredients and slowly add shortening and water mixture and the vinegar. Blend, then add eggs. This mixture should feel slightly warm.

    Pour the yeast mixture into the ingredients in the bowl and beat at highest speed for 2 minutes. Place mixing bowl in a warm place, cover with plastic wrap and a towel, and let the dough rise approximately 1 to 1 1/2 hours or until doubled. Return to the mixer and beat on high for 3 minutes.

    Spoon the dough into 3 small (2 1/2" by 5") greased loaf pans or 1 large one. Use muffin tins and bake any remainder as small rolls.

    GF Flour Mix:
    2 cups white rice flour
    2/3 cup potato starch flour
    1/3 cup tapioca flour
