A salmon filet is brushed with a mixture of bottled barbecue sauce, lemon juice and peel, cilantro, soy sauce and cumin, before grilling.
• 1/3 c. tangy BBQ sauce
• Juice of 1 lemon (3 to 4 Tbsp.)
• Zest of 1 lemon, grated
• 1/2 t. cumin
• 1 T. soy sauce
• 1/4 cup chopped cilantro
• 1 1/2 to 2 pound salmon filet (skin on)
• Cooking oil
In small bowl, combine first 6 ingredients. Rinse salmon and pat dry. Brush salmon with just enough marinade mixture to coat, reserving the rest for when the salmon is cooking. Allow salmon to set for at least 10 minutes. Apply oil to cooking grates. Grill salmon, flesh side down, over medium heat for 3-4 minutes. Carefully turn salmon. Brush with remaining marinade and continue cooking for 5-7 more minutes or to desired level of doneness. Remove from heat and serve immediately.

Grilled salmon is basted with a cooked glaze containing butter, brown sugar, teriyaki sauce and garlic.
• 1 stick of butter
• 1/3 cup of brown sugar
• 2 Tablespoons Teriyaki sauce
• 1 clove of garlic, minced
• 3 salmon fillets
In a medium saucepan melt butter. Add teriyaki sauce, brown sugar and garlic. Cook on medium heat until liquid becomes thickened into a glaze. Put salmon fillets, skin side down, over medium heat on the grill. Baste with glaze as the salmon cooks. Cook until salmon flakes easily with a fork. If any glaze remains, reheat and use as a dip for the salmon.

1 pound cod fillets
1/4 cup lemon juice
1 tablespoon fresh chopped parsley
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1 onion thinly sliced
Use heavy aluminum foil cut into large squares.
Place equal portions of the fish fillets on each piece of foil.
In a saucepan, melt butter. Add lemon juice, parsley, salt and pepper. Stir to blend well.
Pour this mixture over the fish, sprinkle with paprika and top with onion slices. Fold the foil around the fish and seal.
Grill for 5-7 minutes per side. Fish should flake easily when done.
