2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup shortening or butter
1 egg, beaten
2-1/2 cups buttermilk
Step 1: Preheat griddle or frying pan to medium heat.
Step 2: In a mixing bowl, combine flour, baking powder, salt, and baking soda.
Step 3: Cut in shortening or butter.
Step 4: Add the beaten egg and fresh buttermilk and mix until smooth.
Step 5: Fry on a hot griddle or frying pan.

Heat griddle to 375 degrees and spray lightly with a cooking spray.
Whisk flour, baking powder, salt, and sugar in a bowl. Add egg, milk, and butter. Whisk to combine. Batter should have small to medium lumps.
Using 1/4 inch cup, pour batter onto griddle.
Makes enough pancakes for two hungry people. I usually double the recipe and freeze any remaining pancakes.
