HUMMING BIRD CAKE

3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 1/2 c. oil
1 1/2 tsp. vanilla
8 oz. can crushed pineapple (drained)
3 eggs, beaten
1 c. pecans, chopped
2 c. bananas, mashed

Combine all dry ingredients, then add oil and beaten eggs. Do not beat too much. Add all remaining ingredients and stir until mixed. Pour into greased and floured layer cake pans. Bake at 350 degrees for 30 minutes. When cool ice with butter icing. Enjoy this Humming Bird Food Recipe.

BUTTER ICING:

1/2 c. butter
1/2 c. shortening
1/4 tsp. salt
1 1/2 tsp. vanilla
5 1/2 c. confectioner's sugar (4 c./1 lb.)
1/4 c. and 1 tbsp. milk

OPTIONAL: When cake is iced, take 1/2 cup crushed pecans and press lightly to sides of cake and sprinkle on top. Add sliced bananas on top of cake.

HUMMING BIRD CAKE (Humming Bird Food Recipe)

3 c. flour
2 c. sugar
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 c. vegetable oil
3 eggs
1 can (8 oz.) crushed pineapple
2 c. chopped bananas
1 c. chopped nuts (optional)

Preheat oven to 350 degrees. Cook in tube pan. Bake 1 hour 10 minutes. In a large bowl sift together flour, salt, soda and cinnamon, add remaining ingredients and stir until mixed. Do not beat. Ice with Cream Cheese Frosting.

CREAM CHEESE ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
2 c. powdered sugar
1 tsp. vanilla
