Ice Cream Maker Recipe: Vanilla Ice Cream

3 cups milk
2 3/4 cups sugar
3/4 teaspoon salt
3 cups half and half
2 tablespoons vanilla extract
6 cups whipping cream

Scald milk until bubbles form around the edge of pan. Remove from heat; add sugar and salt, stir until dissolved. Stir in half and half, vanilla extract and whipping cream. Cover and refrigerate. Freeze according to manufacturer's instructions or see "How To Use A Rival Ice Cream Maker".
For lower fat and cheaper recipes: you can substitute whole milk for the half and half, and canned evaporated skim milk for the whipping cream.

Makes enough for a 6 quart ice cream maker.

Ice Cream Maker Recipe

4 cups heavy (whipping) cream
2 cups light cream or half and half
1 cup unsweetened powdered cocoa
2 14-ounce cans sweetened condensed milk
2 tablespoons vanilla
1 cup chopped nuts (pecans or walnuts)
2 cups miniature marshmallows

Over low heat, cook condensed milk and cocoa until smooth and thickened, about 5 minutes. Remove from heat and allow to cool somewhat. Stir in cream and vanilla. Refrigerate in ice cream can for half an hour or more.

Freeze and churn according to instructions, adding nuts and marshmallows after about 20 minutes (halfway through the freezing process). Makes enough for a 4 quart ice cream maker.
