1 lb white beans (navy, or
1 canellini)
1/2 c olive oil
1/3 c white wine vinegar
2 tb dijon mustard
4 chipotle chiles, soaked in
1 hot water for 20 min, seeded
1 julienned
2 scallions (green onions),
1 chopped
2 sprigs fresh oregano,
1 chopped, or
1 ts dried
1 salt and pepper
Wash beans, heat with 2 qt water, bring to boil and cook until just
tender (ca 1 hr). Don't overcook them. Turn off, and let cool in the
water. Drain.
Whisk the oil, vinegar and mustard together. Pour over beans in large
bowl. Add chiles, scallions and oregano. Season to taste with salt
and pepper, and mix well. Try not to break the beans (it's tough).
Marinate refrigerated for at least 24 hours before serving. Serves
8-10. I lined the bowl with some endive

MARINADE
1/2 c dry vermouth
1/2 c olive oil
2 tb fresh lemon juice
3/4 ts salt
1/8 ts pepper
1/2 ts thyme
1/2 ts marjoran
1/4 ts sage
1 tb fresh minced parsley
4 salmon steaks
MANGO & CORN SALSA
6 ears corn
2 tb olive oil
1 salt & pepper to taste
1 jalapeno chili pepper
1 lg or 2 sm. mangos - peeled;
-thinly sliced
1/2 red pepper; thinly sliced
1/2 green pepper; thinly sliced
1/4 c minced cilantro
2 plum tomatoes; finely
-chopped
1 lg clov garlic; crushed
1 tb hot red pepper sauce
4 limes; (juice of)
1 pinches sugar
Marinate steaks for 3 hours. Broil 7 minutes on each side. Baste
frequently.
Mango & Corn Salsa:
Husk corn, baste with 2 tbsp olive oil, salt, & pepper. Grill or broil 4
inches from heat till golden (about 10 minutes).
Roast jalapeno pepper till skin is charred. Peel...take out seeds & chop
pepper.
Put kernels in bowl , add roasted pepper & stir in all ingredients. Let
sit for a few hours if possible.
