I had a package of artisan pasta that consisted of long coiled strands and I needed to come up with a sauce that would pair well with this shape. I picked up a pound of fresh shrimp and some ripe cherry tomatoes and decided to keep the sauce simple. On my way into the house, I noticed our patch of arugula needed to be cut in our small kitchen garden, so I cut a bowl full of that as well. I decided that the peppery arugula would contrast nicely with the sweet tomatoes and shrimp and this tasty pasta dish was created. You could use spaghetti, or any short pasta shape you choose instead of the pasta shown here.
1 Pound Medium Shrimp, Cleaned And Deveined
3 Cups Ripe, Cherry Tomatoes, Halved
2 Cloves Garlic, Peeled And Minced
3 Tablespoons Olive Oil
1 Bunch Fresh, Washed Arugula, Torn Into Pieces
Salt & Pepper
Red Pepper Flakes
1 Pound Pasta
While waiting for the pasta water to boil, heat the oil in a heavy frying pan and then add the shrimp. Cook for a couple of minutes, or just until the shrimp turn pink. Add the garlic, salt and pepper, red pepper flakes, and tomatoes, and mix well. Cook only for another minute or two and then turn off the heat.
Cook the pasta until it is al dente , drain it reserving a small cup of the pasta water, and return the pasta to the pot. Add the shrimp mixture and arugula, and cook for a minute or two over high heat until it is piping hot and the arugula is wilted. If the mixture seems a little dry, add a spoonful of the pasta water.

8 lasagna noodles
2 tablespoons butter
1 cup chopped onion
1 (8 ounce) package cream cheese, softened
1 1/2 cups cottage cheese, creamed
1 egg, beaten
2 teaspoons dried basil
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 (10.75 ounce) cans condensed cream of mushroom soup
1/3 cup milk
1/3 cup dry white wine
1 (6 ounce) can crabmeat
1 pound cooked salad shrimp
1/4 cup grated Parmesan cheese
1/2 cup shredded sharp Cheddar cheese
2 cups fresh sliced mushrooms
Cook noodles in a large pot of boiling salted water until done. Rinse and drain noodles. Set aside.
Melt butter or margarine in a small saute pan over medium heat. Add onion; cook and stir until tender. Add cream cheese, cottage cheese, egg, basil, and salt and pepper.
In a medium bowl, combine soup, milk, and wine. Stir in crab, shrimp, and mushrooms.
Place 4 noodles in the bottom of a well oiled 9x13 inch pan. Spread 1/2 cheese mixture over the noodles, and spoon 1/2 soup mixture over cheese. Repeat layers.
Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes. Top with sharp cheese, and parmesan cheese. Brown lasagna under broiler. Remove from oven, and let stand 15 minutes before serving. A great pasta recipe - seafood.

1 lb. Orzo
1 tbsp. oil
1 large onion, chopped
1 medium red bell pepper, chopped
2 large garlic cloves, minced
2 14.5 oz. cans of fat-free, reduced sodium chicken broth
2 cups orange juice (from carton)
1/4 cup cooking sherry
2 tsp. caribbean jerk seasoning
1-1/2 lbs. medium shrimp, shelled and deveined
1 15 oz. can black beans, drained and rinsed
1/4 cup chopped fresh cilantro
Cook pasta according to pasta directions. While pasta is cooking, heat oil in large deep skillet over medium heat. Add onion, red bell pepper, and garlic; sauté until tender, about 4 minutes. Stir in orzo, chicken broth, orange juice, cooking sherry and jerk seasoning; bring to a boil, stirring frequently. Return heat to medium-low; partially cover and simmer 10 minutes, stirring occasionally.
Stir in shrimp and black beans; simmer 2 minutes more. Turn off heat, cover tightly and let stand 10 minutes, or until liquid is almost absorbed and pasta has the creamy consistency of risotto; stir in cilantro.
