2 cups grated potatoes, about 1 1/2 pounds potatoes
1 medium onion, grated
1/4 cup milk, scalded
1 egg
2 tablespoons all-purpose flour
1 teaspoon salt
dash pepper
1 teaspoon baking powder
parsley
vegetable oil
Combine grated potatoes and onion; place in a strainer to allow liquid to drain off into a bowl. When starch has settled, pour water off and add starch back to potatoes. Pour the hot milk over the potatoes, then add the beaten egg.
Sift together flour, seasonings, and baking powder, then blend into the potato mixture. If desired, add chopped parsley.
Heat about 1 to 2 inches of oil in a deep skillet (you may use a deep fryer for these). Drop potato mixture by tablespoons into the hot fat. Fry until golden brown and drain on paper towels.
Makes 6 pancakes.
-------------------
4 medium potatoes (or 2 large)
1 medium onion
3 to 4 tablespoons oil (or lard)
2 eggs
1 cup flour
a good pinch salt
Peel and coarsely grate the onion. Grate the potatoes and mix with the onion. Add the eggs, flour and salt and stir well together.
Heat a heavy frypan over medium/high heat, add the oil and spoon in about 4 tablespoons of the mixture. Pat it down as thick as a hotcake and when the edges are brown and crisp, flip it over and cook the other side. Eat them hot with apple sauce and/or sour cream.
