3 medium baking potatoes
vegetable oil
seasoned salt
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled
sour cream
jalapenos
picante sauce
Preheat oven to 400 degrees. Scrub potatoes thoroughly and rub skin with oil. Bake for 1 hour or until done. Allow potatoes to cool to touch. Cut in half lengthwise. Carefully scoop out pulp, leaving 1/4 to 1/8 inch shells. Cut skins in half crosswise and deep fry in hot oil for 2 to 3 minutes or until lightly browned. Drain on paper towels. Place skins on baking sheet. Sprinkle with salt, cheese, and bacon. Place under broiler until cheese melts. Serve with sour cream, jalapenos, and/or picante sauce.

Quarter 1 large baking potato. Cut potato down to about 1/4 inch of the skin. Butter and bake in a 350 degree oven for at least 20 minutes. Then top with cheese and return to oven to melt. To serve, top with bacon crumbles and scallions. Serve with sour cream.

1 large baking potato
black pepper
1 tablespoon chopped green onion
butter flavor nonstick spray or melted butter
seasoned salt
2 tablespoons sour cream regular or reduced fat
Bake one potato in microwave for 4 to 6 minutes. Remove from oven after baking; wrap in foil and let stand for 5 to 10 minutes. Unwrap potato and cut in half lengthwise. Let potato cool until it can be handled.
Gently scrape the insides of the potato out, do not scrape all the way to the skin (leave a little potato around the edges and on the bottom). Reserve scrapings for another meal, if desired. Season skins with seaoned salt and pepper. Sprinkle green onion on each one. Place in small pan sprayed with the cooking spray. Lightly spray the potato skins with the butter flavored spray or drizzle with a little melted butter. Place under broiler until golden brown.
Remove from broiler and spread inside of each potato with 1 tablespoon of sour cream. Serve warm.

Bake potatoes. Cool then cut in half; cut again in half making 8 pieces. Scoop flesh from skins leaving about 1/8-inch shell. Mix:
1/4 c. melted butter
1 tsp. soy sauce
Brush this mixture on both sides of the skins. Place skins on baking sheet. Bake until crisp, 10-12 minutes. Serve skins sprinkled with coarse salt or choose topping:
Grated cheese
Chopped onions
Crumbled bacon
Sour cream
Salsa sauce
Or any of your favorite toppings or dips
