Rival Vanilla Ice Cream

3 cups milk
2 3/4 cups sugar
3/4 teaspoon salt
3 cups half and half
2 tablespoons vanilla extract
6 cups whipping cream

Scald milk until bubbles form around the edge of pan. Remove from heat; add sugar and salt, stir until dissolved. Stir in half and half, vanilla extract and whipping cream. Cover and refrigerate. Freeze according to manufacturer's instructions or see "How To Use A Rival Ice Cream Maker".
For lower fat and cheaper recipes: you can substitute whole milk for the half and half, and canned evaporated skim milk for the whipping cream.

Makes enough for a 6 quart ice cream maker.

PUMPKIN ICE CREAM RECIPE

2 eggs
1/4 tsp cinnamon
1/2 tsp nutmeg
1 1/2 cup milk
1 cup sugar
1 cup whipping cream
1 cup canned pumpkin
In a saucepan over medium heat, whisk milk, sugar and eggs. Stirring constantly. Cook until slightly thickened, about 10 minutes. Remove from heat. Whisk in cream, pumpkin, cinnamon and nutmeg. Chill thoroughly. Good for Rival.

OLD FASHIONED VANILLA ICE CREAM

2-1/4 cups sugar
1/4 cup plus 2 tablespoons flour
1/2 teaspoon salt
5 cups milk
4 eggs, beaten
4 cups whipping cream
2 tablespoons vanilla extract

Combine sugar, flour, and salt in a saucepan. Gradually stir in milk. Cook over medium heat approximately 15 minutes or until thickened, stirring constantly. Gradually stir about 1 cup of hot mixture into the beaten eggs. Add egg mixture to remaining hot mixture, stirring constantly. Cook 1 minute; remove from heat. Refrigerate 2 hours. Combine whipping cream and vanilla in a large bowl; add chilled mixture, stirring with wire whisk to combine. Freeze as directed. Rival.
