Roasted Potato Recipe

Russet Potatoes, washed, peeled, and sliced as for thick steak fries
Olive Oil
Creole Seasoning or Cajun Rub (see links below)

Preheat oven to 350°.

Lightly coat a baking pan with olive oil and add potatoes in a single layer. Roll the potatoes around in the oil to coat. Sprinkle with Cajun seasoning to taste. Place the baking pan on the middle rack of the oven and roast for about 30 minutes or until brown and crispy.

Cajun Roasted Potatoes

2 pounds cut up potatoes
1 tablespoon olive oil
1 1/4 teaspoons salt
1/2 cup chopped green bell pepper
3/4 teaspoon paprika
1/2 teaspoon finely minced garlic
1/8 to 1/4 teaspoon ground cayenne pepper
1/4 teaspoon thyme
PREPARATION:
Combine potatoes and olive oil in a 13x9x2-inch baking pan. Sprinkle with seasonings and toss to coat well. Roast at 450° for about 35 minutes, stirring 2 to 3 times.

Oven Roasted Potatoes Recipe

1 envelope Lipton Recipe Secrets Onion Soup Mix
2 pounds all-purpose potatoes cut into large chunks
1/3 cup olive or vegetable oil
(I use red potatoes and 1/2 olive oil - 1/2 vegetable oil)

Preheat oven to 450 f.
In large plastic bag or bowl, add all ingredients. Close bag and shake or toss in bowl until evenly coated.
Arrange potatoes in 13" x 9" baking pan. Discard mixing bag.
Bake uncovered 40 minutes, stirring occassionally, or until potatoes are tender and golden brown.
