Round Steak with Vegetables

1 1/2 pounds round steak
1 medium onion, sliced
1/2 cup sliced mushrooms
1 green bell pepper, sliced
salt and pepper
3 tablespoons bacon drippings or vegetable oil
6 small potatoes, halved, or 4 medium potatoes, quartered
24 baby carrots or 4 to 6 small carrots, cut in pieces
8 small onions
2 cups cut green beans, fresh or frozen
1 cup reserved vegetable water or beef broth

Boil vegetables in salted water for about 10 minutes; drain and reserve 1 cup of the vegetable water. Cut steak into 6 serving-size pieces. Season with salt and pepper then dredge in flour. Pound meat to thin and flatten with meat mallet as for Swiss steak. On each serving of beef, place a slice of onion, a slice of green pepper, and mushrooms. Shape meat into rolls and fasten with toothpicks. Place meat in skillet with bacon drippings or oil and brown on all sides. Remove beef to a large casserole; place partially cooked vegetables around beef rolls. Add 1 cup of vegetable water or broth. Cover and bake at 350° for 45 to 60 minutes. Remove to a heated serving platter and serve with pan juices.

Round Steak Recipe

1 round steak
1 cup flour
salt
pepper
garlic powder
oil

Cut steak into serving size pieces.
sprinkle both sides of steak with salt, pepper, and garlic powder.
Dredge both sides of steak with flour.
Pound the heck out of the floured steaks with a meat tenderizing mallot.use the side with the pointy cuts in it. Pound both sides of the steak.
Pour enough oil into the bottom of a frying pan to come up about 1/8 inch.
Heat to high.
Place steaks into oil and immediately turn down heat to almost medium heat.
Let cook until blood is rising to the tops.
Turn and cook for about 5 minutes on the otherside.
He would serve this with A-1 sauce, or simmer it in gravy with sauteed onions.
