Salisbury Steak Supper

2 tablespoons butter
4 medium onions, sliced
2 medium green peppers, cut in strips
1 pound lean ground beef
1 cup soft bread crumbs (about 2 slices white bread)
1 egg
salt and pepper
1 tablespoon all-purpose flour
1 cup water
2 tablespoons ketchup
1 tablespoon dry sherry or red wine

Melt butter in a large skillet over medium-low heat; add onions and green peppers. Cook, stirring, until onions are tender. Remove to a warm platter and keep warm. In a mixing bowl, combine ground beef, bread crumbs, egg, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Mix gently with hands or fork. Shape mixture into four 1/2-inch thick oval patties.

Salisbury Steak Recipe

1 1/2 pounds lean ground beef
1 onion -- finely chopped
1/2 cup dry bread crumbs
1 egg -- slightly beaten
1/2 teaspoon salt
1/8 teaspoon pepper
1 can condensed golden mushroom soup -- 10 3/4 oz
1/3 cup water

Combine first six ingredients in a medium mixing bowl. Add 1/4 cup soup, reserving remainder. Shape into 6 elongated patties and place on broiler pan. Broil 3 to 4 inches from flame, turning once. For rare steaks, cook 3 to 4 inches on each side or 5 to 7 minutes for medium cooked meat. Combine reserved soup and water in a small saucepan. Heat thoroughly and spoon over coooked meat.
