Fiery Salsa

1 lg Onion
8 Tomatoes
10 Jalapeno peppers
1/2 sm Bunch cilantro (no stems)
1 Lime (juice only)
1 Lemon (juice only)
2 tb Vinegar
1 ts Salt
1 ts Pepper
1 ts Garlic salt
1 ts Oregano

Dice onions, tomatoes, jalapenos, and cilantro as small as possible. Combine the rest of the ingredients. Chill overnight.

Double Tomato Salsa Recipe

2 tb Lemon juice
2 tb Orange juice
1 Or 2 Poblano or Anaheim
-chiles; roasted and peeled
1-1/2 lb To 2 lbs tomatoes; seeded
-and quartered
8 Oil-cured, sun-dried tomato
-halves; chopped
3 tb Fresh cilantro or Parsley;
-chopped
1/4 c Fresh basil; chopped
1 tb Olive oil
Salt and pepper to taste

Combine juices and roasted peppers in food processor; process briefly. Add fresh and sun-dried tomatoes; process into chunky sauce. Transfer to bowl; stir in remaining ingredients. Chill 30 minutes or serve immediately. Makes 9 x 1/4-cup servings.

citrus-salsa recipe

1 medium navel orange
1 large lemon
2 Tbsp finely chopped fresh rosemary
juice of one lemon (about 2 Tbsp)
1 Tbsp sucanat

Peel zest from the orange && lemon, leaving the
white pith intact on the fruit. Slice half the
zest into very thin strips, about 1/16 inch thick.
Discard remaining zest or save for another use.

Cut the peeled orange && lemon, including pith,
into quarters. Put fruit into food processor
or blender && coarsely chop.

Pour fruit into a small saucepan && stir in
rosemary, juice, && sucanat. Cook over medium heat
for 2 or 3 minutes. Remove from heat, stir in
zest, && let cool. Spoon into a sterilized jar
and refrigerate.
