15 large Shrimp, boiled
1/2 cup Heinz Chili Sauce
1 Tbsp Lemon or Lime juice
1/2 cup Catsup
1/2 cup Parsley, chopped fine
1/2 cup Horseradish
1 drop Hot Sauce
1 Tbsp Worcestershire sauce
1/2 tsp Salt
Clean shrimp by deveining and discarding heads and shell if present. Leave shrimp tails intact. Boil shrimp for about 3-4 minutes. Do not over cook as shrimp will become tough. Shrimp are done as soon as they become opaque. Combine all cocktail ingredients to make sauce. Place 3-4 shrimp in individual serving dishes with greens and lemon garnish. Pour cocktail sauce over shrimp, or dip the shrimp in the sauce. Serves 3 to 5.

Frozen cooked, cleaned, shrimp with tails-on and thawed
Cocktail Sauce (see recipe below)
Fresh parsley for garnish
Fresh lemon slices for garnish
Place cocktail sauce in a martini glass. Place several fresh shrimp on the rim of the glass with the tails on the outside. Make one cut in each lemon slice starting at the center and cutting through to the outside. Place a cut lemon slice on each glass where you made the cut so that it stands up. Add a sprig of parsley and serve.
Makes 4 servings.
COCKTAIL SAUCE:
1/2 cup chili sauce or catsup
2 tablespoons hot cream-style horseradish
1/4 teaspoon sugar
1/2 teaspoon Kosher salt
1/2 teaspoon freshly cracked black pepper
2 teaspoons fresh lemon juice
4 drops Tabasco
1/2 teaspoon Worcestershire Sauce
2 garlic cloves, minced
In a small bowl, mix ingredients together to taste, cover and chill until ready to serve and to develop flavor.
-----------------------
4 medium tomatoes diced
1 bunch green onions
1 bunch cilantro
1 lb. medium shrimp peeled (reserve shells)
1 jar clam juice
2 T. ketchup
juice of 2 limes
tabasco sauce
Wash cilantro, chop leaves and discard stems. Mix with tomatoes and onions and set aside. Boil shrimp in clam juice (and enough water to cover the shrimp) until pink. Remove shrimp and chill. Add shells to the liquid and simmer for 10 minutes. Strain the liquid and reserve.
To serve: In a tall glass, layer shrimp and tomato mixture in several layers. Add ketchup, lime juice and tabasco sauce (to taste) to the reserved clam liquid. Pour liquid over the shrimp to cover it. Chill until ready to serve.
