Raw Rice flour: 2 tbsp
Sugar : 625 gms
Ghee : 1 tsp
Salt : A pinch
Cashewnuts: 100 gms
Raisins : 25 gms
Cardomoms : 10 No
Kalkandu(cubed sugar) : 25 gms
To Prepare boondi :
In a wide mouth mixing bowl, mix bengal gram flour, rice flour, a pinch of salt, ghee and with required amt of water, make a thick liquid to the consistency of dosa batter.
Heat oil in a frying pan, holding the boondi plate (a plate with lot of holes), above the oil spread the batter so that very small pieces are dropped into the oil. Stir the boondis until fully cooked. Drain the excess oil.
To prepare Laddu :
Make sugar syrup by boiling 1:1 sugar and water for about 5 minutes. Add a pinch of kesari powder to this syrup. Drop the boondis into the sugar syrup and mix well. Roast cashewnuts and raisins in ghee and add it to the mix.
Also add cardamoms and kalkandu and mix well. Wait until the mixture cools down to a temperature until your hand can with stand the heat. Now make into even balls by pressing lightly with hand. Spread and allow to cool. South Indian Recipe.

Cololasia(seppankizhangu) - 1/2 kg, Oil - 4 tsp, Salt - 1/2 tsp, Chilli powder - 1/2 tsp, Curry leaves a bunch.
Boil the cololasia in a pressure cooker until it becomes very soft. Cool and peel them. Heat the oil in a frying pan, add mustard seeds. When it splutters add urad dal. When urad dal is roasted, add the cooked cololasia, salt, chilli powder and fry until they are roasted. In the end, add curry leaves and stir.

Okra (ladies finger) - 1/2 kg, salt - 1/2 tsp, red chilli powder - 1 tsp, oil - 5 tsp.
Cut okra into cubical pieces.And dry it on a sheet of newspaper for 5 minutes.Heat a little oil in a fry pan, add 1/2 tsp mustard seeds.Add 1/2 tsp urud dal,and add the cut okra,salt, red chilli powder and fry until it is roasted evenly. In the end, add a tsp of kari masala powder. South Indian Recipe.

1 tbl. finely chopped fresh ginger
1 tsp. finely minced garlic
1 tbl. vegetable oil
1 tbl. curry powder
1/4 tsp. ground cinnamon
1/2 tsp. ground turmeric
1/4 tsp. ground coriander
1/4 tsp. ground cumin
1 lb. ground meat, such as lamb, beef, or veal
1 cup chopped fresh or canned tomatoes
1 tbl. lime juice
1 tsp. sugar
freshly ground black pepper to taste
1/4 tsp. crushed hot red pepper flakes
1 cup peas
1. Combine the onion, ginger, garlic, and oil in the container of a food processor or blender. Blend to a fine puree.
2. Spoon and scrape the mixture into a small skillet and cook, stirring often, until mixture almost starts to brown, but do not brown. Add the curry powder, cinnamon, turmeric, coriander, and cumin and stir to blend.
3. Add the meat and cook, stirring and chopping down with the side of a heavy metal spoon to break up any lumps.
4. When the meat has lost its raw look, add the tomatoes, lime juice and sugar. Add a generous grinding of pepper and the hot red pepper. Cover and let simmer for 30 minutes.
5. Add the peas and continue cooking until the peas are tender, 5 to 10 minutes. Serve with rice, cucumbers and yogurt, carrots with yogurt or mint with yogurt
