Spring Strawberry Spinach Salad Recipe

1 bunch spinach, rinsed
10 large strawberries, sliced

1/2 cup white sugar
1 teaspoon salt, or to taste
1/3 cup white wine vinegar
1/2 cup vegetable oil
1 tablespoon poppy seeds

1 In a large bowl, mix the spinach and strawberries.
2 In a blender, place the sugar, salt, vinegar, and oil, and blend until smooth. Stir in the poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Strawberry Spinach Salad Recipe

1 bag (9 oz.) Fresh Express Spinach
3 kiwi, peeled & sliced
1 pint strawberries, sliced
1 handful, chopped macadamia nuts (optional)

DRESSING:
1/4 C. vegetable oil
2 T. raspberry vinegar
2 T. raspberry preserves
PREPARATION:
Mix dressing ingredients and refrigerate for 15 minutes. Toss together spinach, strawberries, kiwi and nuts. Drizzle with dressing and serve. Makes enough for 4-6. NOTE: This salad is light, healthy and delicious!
