1 3/4 c. all-purpose flour
1/2 tsp. baking powder
3/4 c. butter
1 (4 serving) pkg. strawberry, raspberry, or lime sugar free gelatin
1 egg
1 tsp. vanilla
Mix flour with baking powder. Cream butter and gelatin, beating well. Beat in egg and vanilla. Gradually add flour mixture, blending well. Roll out cookie dough and cut into shapes. If you have a cookie press you may use it. Put on ungreased cookie sheet. Bake at 400 degrees about 8 minutes or until edges are golden brown. Makes about 5 dozen.

3 tablespoons margarine
1 teaspoon artificial sweetener
1 teaspoon vanilla extract
1 egg
1 cup all-purpose flour
2/3 cup water
Beat margarine until fluffy. Add the sugar replacement, egg, and vanilla. Mix for one minute.
Now add the flour and water to get a thin batter. Heat iron griddle and pour one tablespoon batter for each cookie. Cook till golden brown and turn, repeat when brown and remove to rack. Eat the crunchy cookie now or pour fresh fruit mixture over top and serve with sugar free ice cream. Very Good! NOTE: I use the waffle iron sometimes also - just don't burn them.

1 1/2 c. quick oatmeal
1/2 to 3/4 c. Sugar Twin
1 tsp. vanilla
1 c. raisins
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 egg whites, slightly beaten
1/2 c. skim milk
1/3 c. oil
1/2 c. nuts
Sift dry ingredients all but oats. Add oats. Add rest of ingredients, mix. Drop by teaspoon on greased cookie sheets. Bake at 375 degrees for 12-15 minutes.
