Crockpot Taco Soup Recipe

1 to 1 1/2 pounds ground round or turkey
1 med to large onion chopped
2 tbsp. oil
1 can corn-undrained
1 can black beans-undrained
1 can kidney beans-udrained
2 cans chopped tomatoes with chiles
1 can tomato sauce (regular size)
1 envelope taco seasoning

Add chopped onion to hot oil in fry pan. Cook until tender; add ground meat and cook until no longer pink. Drain well and transfer to crockpot. Add corn, black beans, kidney beans, tomatoes, tomato sauce, and taco seasoning; stir well.

Cook on low for four to six hours. When serving, top soup with broken taco chips and shredded cheddar cheese.

Chili Taco Soup Recipe

2 pounds ground beef
1 small onion, chopped
1 teaspoon salt
1/2 teaspoon black pepper
3 cans Mexican style stewed tomatoes
15 ounces can pinto beans (or jalapeno pinto beans)
1 can whole kernel corn
1 can mixed vegetables
1 envelope taco seasoning mix
1 envelope Ranch dressing mix
2 cups water

Brown beef with onions. Drain fat, place meat and onions in large soup pot, add salt, pepper, tomatoes, beans, corn, mixed vegetables, taco season, ranch season and water. Bring to a boil, then simmer about 30 minutes.

TACO SOUP

1 lb. lean ground beef
1 lg. chopped onion
1/2 tsp. minced garlic

Saute, drain off all fat liquid. Add: 1 pkg. taco mix (Lawry's)
Mix together. Add: 15 oz. can each corn kernels, kidney beans, chili with no beans (Hormel), Mexican stewed tomatoes, yellow or white hominy.

Bring to a boil, then simmer 1 hour. To serve: put a few tortilla chips in bottom of bowl, add soup, garnish with condiments. Condiments: guacamole or chopped avocado, grated cheese, sour cream, chopped tomatoes, green onion, sliced olives. I always double recipe.
