Waldorf Salad Recipe

1 red apple, cored and chopped
1/2 cup celery, thinly sliced
1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)
1/2 cup chopped toasted walnuts
1/4 cup mayonnaise (or plain yogurt if you must)
1 Tbsp fresh lemon juice
Salt
Pepper
Lettuce

In a medium sized bowl, whisk together the mayo (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.

Classic Waldorf Salad

3 medium golden delicious or red delicious apples (about 2 to 2 1/2 cups cubed)
1 tablespoon sugar
1 teaspoon lemon juice
1 dash salt
1 cup thinly sliced celery
1/2 cup coarsely chopped walnuts
1/4 cup mayonnaise
1/2 cup whipping cream, whipped
mixed salad greens

Directions for Waldorf salad
Wash apples; core and cut into 1/2-inch cubes. Do not peel. Sprinkle cubed apples with sugar, lemon juice and salt. Add celery and nuts. Fold mayonnaise into whipped cream.

Fold mayonnaise mixture gently into apple mixture. Waldorf salad is served on mixed salad greens.
