Zucchini Summer Squash

1 sm Or 2 zucchini
1 sm Onion; chopped
2 tb .. or 3 butter
1/2 ts Salt
1/4 ts Pepper
2 Tomatoes; chopped
1 c Cheese; grated

Wash squash and slice in half lengthwise, then
slice about 1/4" thick. Melt butter in large
skillet; add zucchini and onion and fry until
moisture is reduced. Add salt, pepper and tomato.
Simmer about 10 minutes. Add cheese about 5
minutes before serving. Cover pan to melt cheese.

Stir-Fried Chicken, Zucchini and Squash

4 boneless skinless chicken breasts, cut into thin strips
ground black pepper
2 teaspoons vegetable oil
2 teaspoons butter or margarine
1 medium onion, sliced
1/4 teaspoon minced garlic
3/4 lb zucchini, thinly sliced
1/2 lb yellow squash, thinly sliced
1/2 cup shredded carrots
1 lemon, juice and zest of
2 cups cooked rice
1/2 cup walnut halves (optional)

In large skillet, stir-fry in oil until lightly browned and tender. Remove chicken from pan and set aside.
Add butter to pan and stir-fry onion and garlic until onion is just tender.
Add zucchini, squash, and carrot and stir-fry over medium heat for 3 minutes.
Add chicken and heat through.
Stir in lemon peel, lemon juice and (optional) walnut halves. Toss to mix.
Serve over hot cooked rice.

Simple Braised Zucchini

1. Cut scrubbed zucchini or summer squash into 2-inch chunks.
2. Saute a few onions in oil in a large heavy-bottomed skillet.
3. Add squash, a couple of cut-up tomatoes, and a handful of chopped fresh parsley.
4. Simmer uncovered for half an hour.
