Chocolate Zucchini Bread

Yield: 1 servings
FIRST LAYER 1/2 c Margarine 1/4 c Finely chopped nuts 1 c Flour SECOND LAYER 8 oz Cream cheese 1 c Powdered sugar 1 c Cool Whip THIRD LAYER 1 sm Box instant chocolate -pudding 1 sm Box instant vanilla putting 3 c Milk
FIRST LAYER: Mix and pat into 9x13" pan. Bake 15 minutes at 325 F. SECOND LAYER: Mix and spread on top of cooled first layer. THIRD LAYER: Mix in a bowl as per directions on box. Spread on top of second layer. Then spread the remaining Cool Whip from the large size Cool Whip on top of pudding. Shave chocolate curls on top or sprinkle with chocolate Jimmies. Refrigerate until ready to serve.

A "WHAT TO DO WITH ALL THOSE ZUCCHINI" BREAD

Yield: 4 Servings
2 To 3 pounds pork spareribs 1 1/2 c Hot water 1 md Potatoes, pared and halved 1 1/2 c Canned or cooked green beans -with liquid Salt Pepper
Brown spareribs in frying pan without added fat. Add water andsimmer for 1 hour. Add potatoes to meat and cook until tender - about 25 minutes. Add beans and liquid the last 10 minutes of cooking. If raw beans are used, add with the potatoes. Season with salt and pepper. Skim off excess fat before serving. To complete the meal: Serve with crisp lettuce, tomato and celery salad, and apple betty with lemon sauce for dessert. For variety: Beef short ribs may be used with longer cooking. Corned beef, ham hock, or ham bone may be used in place of shortribs. Cover with water and simmer about 3 hours or until tender. Omit salt, and continue as above. Good with sauerkraut.

1 Pita Bread - Mother Natures Whole Wheat 2 tb Pizza Sauce - Catelli Mild Or spicy 2 sl Yves Veggie Pepperoni 1/4 sm Onion 1/4 c Mushroom Pieces 1/4 c Mozzarella - Healthy Favorites Fat Free 1/4 c Hot Banana Pepper Rings -- Optional 1/4 c Chopped Green Peppers
Spread pizza sauce on pita bread. Arrange sliced meat, vegetables and cheese slices on top. Sprinkle on parmesan cheese. Place on baking sheet. Bake at 425 for approx. 8 min. Different vegetables can be used without really changing the calorie count. NOTES : Calories - 164.3, Total Fat - .5g, 2.6% CFF

ONION ZUCCHINI QUICK BREAD~ TRIED

Yield: 4 Cups
6 lg Vidalia onions, peeled & -- chopped 1 tb Salt 1 tb Sugar 4 c White vinegar
Place onions, salt and sugar in a large clean crock or glass jar. Heat the vinegar in the microwave about 2 minutes on High (100 percent) and pour over onion mixture. Cool and seal. Store in cool dark place 1 to 3 months. Clarify through a coffee filter, then pour into 2 small fancy bottles. Add fresh onions or green onions to each bottle. Seal and label. CHARLO'S ZUCCHINI BREAD

Yield: 48 Muffins
2 c Self-Rising Flour 1 c Butter; at room temperature 1 c Sour Cream 1/2 c Sesame Seeds; lightly -toasted 1 tb Paprika Vegetable Cooking Spray
Preheat the oven to 425?F. In a mixing bowl, mix the flour and softened butter with a fork until barely blended. Add the sour cream, sesame seeds, and paprika and mix again until barely blended. Spray baking sheets or mini-muffin cups with vegetable cooking spray. Drop the dough by teaspoonfuls onto the pan or into the muffin cups. Bake until brown around the edges, about 10 minutes. Watch closely, for they burn easily.

BETTY'S ZUCCHINI BREAD

Roast beef (cooked & cut Into bite size pieces) Mixed cooked vegetables 1 pk Brown gravy mix Cooked mashed potatoes
Use any amounts of roast beef and vegetables you want. Mix all ingredients and put in a greased casserole. Put in oven until hot, then top with mashed potatoes.

PICKLED BREAD-AND-BUTTER ZUCCHINI

1 c White vinegar 1/2 c Water 1/4 c White sugar 1/8 ts Salt 1 tb Mixed pickling spices 1 md Onion, sliced 1 Ring bologna, cut into -2-3 inch pieces
Mix together first 5 ingredients and boil for 8 minutes; cool. Put bologna and onions in large glass jar. Pour vinegar mixture over bologna. Refrigerate overnight before serving. Store in refrigerator.

PINEAPPLE ZUCCHINI BREAD

Yield: 12 Servings
3 Egg whites -- whipped 1 c Applesauce 2 ts Vanilla 2 c Zucchini -- shredded 8 oz Can pineapple -- crushed -drained 3 c Unbleached flour 2 c Granulated sugar 2 ts Baking soda 1 ts Salt 1/2 ts Baking powder 1 1/2 ts Cinnamon 1 c Raisins
Preheat oven at 350. Prepare pan(s) with cooking spray and flour. In a mixing bowl, combine egg whites, applesauce, vanilla, zucchini , and pineapple. In another mixing bowl, combine flour, sugar, baking soda, salt, baking powder, cinnamon, and raisins. Mix wet ingredients with dry ingredients just until moistened. Pour into prepared baking pan(s). Bake for 1 hour depending on pan size.

CHOCOLATE ZUCCHINI BREAD

6 Egg yolks 1/2 c Sugar 2 oz Smi-sweet chocolate 1/3 c London Golden Cream Sherry 3 tb Heavy cream
In a double boiler, over low heat, beat the egg yolks with the sugar, until foamy. Melt the chocolate in a second double boiler. Add the Sherry and the cream. Slowly pour the chocolate mixture into the eggs, Whisk continously until the mixture thickens. Pour into dessert glasses. Serve hot with fresh fruit.

3 md Eggs 2 c Sugar 1 c Oil 1 ts Vanilla 2 Squares unsweetened -chocolate Or 4 tbsp cocoa and 2 tbsp -oil 2 c Grated zucchini 3 c Flour 1 ts Salt 1 ts Cinnamon 3/4 ts Nutmeg 1 1/2 ts Baking powder 1 ts Baking soda
Chocolate Zucchini Bread Beat eggs then add sugar. Add oil, chocolate, vanilla, and zucchini. Sift tog. dry ingredients and add to zucchini mixture. Put into 2, 9x5 pans and bake at 350`F for 50-60 mins. If you just want 1 loaf, all ingredients are just halved!!! I also have recipes for zucchini white loaf and another for zucchini muffins.
